5th load of laundry of the year YAY!
I know, I know, you think I’m weird because I enjoy doing the laundry, but not as much as I enjoy baking the 1st cake of the year ; an old fashioned banana bread
This is the first cake of the year but it is my 2nd attempt of making it; I left the bread in the oven for over 20 minutes longer than intended, it wasn’t too bad but it wasn’t too good either
I really wanted banana bread, so I decided to give it another try the next day. The second attempt, turned out great; look at the bread in these pictures
Old Fashioned Banana Bread
I know it’s January and most of us decide to start the new year with a new diet, unfortunately for me, I’m not one of those, not because I wouldn’t like to be on a diet or be skinny and fit but it takes discipline and right now; it’s not a good time for me. Let’s face it, taking care of a 19 month old boy requires energy = calories (just kidding)
OK, enough about me, the banana bread turned out great, the recipe is below, enjoy the rest of the week
Our little one waiting while we baked it the second time, he was annoyed with us because we didn’t let him touch everything around the kitchen and was forced to stay in the living room
- ¼ cup butter
- ½ cup sugar
- 2 ripe, mashed bananas
- 1 egg
- 2½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup buttermilk
- In a large mixing bowl, beat the butter into a creamy texture
- Add sugar and the mashed bananas (use very ripe bananas; it will taste better)
- Mix very well
- Add the egg and continue mixing
- Mix dry ingredients separately
- Begin slowly incorporating the dry ingredients alternating with little amounts of buttermilk until all the ingredients are combined
- Pour into greased and floured 9” x 5” loaf pan
- Bake at 350F for 60 minutes, until toothpick comes out clean in the middle

I know banana cakes are more delicious! and they use almost the same ingredients, they add vanilla extract , they also use a different cake mould and you get to do your own frosting too! I’ve tasted it before and it’s delicious, maybe that’s the one your mom does! there are so many recipes, I have never tried preparing a banana cake! hum! maybe I should give it a try
